Ingredients
  

  • 8 ounces pasta penne, spaghetti, or any type
  • 2 cloves garlic minced
  • ¼ cup extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • ½ cup fresh basil leaves chopped
  • 2 cups chopped tomatoes Roma or cherry
  • ½ cup shredded parmesan cheese
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ cup reserved pasta water optional, for a smoother sauce

Instructions

  • Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions until al dente.

  • Prepare the Bruschetta Mixture: While the pasta cooks, mix the minced garlic, olive oil, balsamic vinegar, chopped basil, chopped tomatoes, shredded parmesan, salt, and black pepper in a large mixing bowl. Stir occasionally to let the flavors blend.

  • Reserve Pasta Water: Before draining the pasta, set aside ¼ cup of pasta water to use later if needed.

  • Combine Pasta and Bruschetta: Use a slotted spoon to transfer the pasta directly into the bruschetta mixture. If the sauce seems dry, mix in the reserved pasta water gradually until it reaches the desired consistency.
  • Let It Rest: Stir everything together and let the pasta sit for about 5 minutes to absorb the flavors and thicken.
  • Serve and Enjoy: Taste and adjust seasoning if needed. Serve with extra basil, parmesan, and black pepper on top.
