Brown the Beef: Brown the ground beef in a large skillet over high heat and drain the grease.

Load the Slow Cooker: Add the browned beef, diced potatoes, chopped onion, and shredded carrots to the slow cooker.

Add Liquids and Seasoning: Pour in the beef broth and cream of mushroom soup. Add Italian seasoning, garlic, salt, and black pepper, then stir well.

Slow Cook: Cover and cook on low for 6 hours or high for 3 hours until the potatoes are tender.
Melt the Cheeses: Add the shredded cheddar cheese and small pieces of cream cheese. Cover and cook for about 30 minutes until fully melted and blended.
