Cheeseburger Potato Soup Crockpot

This is the cozy, cheesy cousin of a fast-food cheeseburger—except it won’t leave you wondering why you ate it. Loaded with ground beef, potatoes, carrots, and plenty of melty cheese, this slow-cooker soup proves comfort food doesn’t need fancy ingredients to taste amazing.

Ingredients
  

  • 1 pound ground beef
  • 2 cups diced potatoes from about 4 small potatoes, peeled
  • 1 cup chopped white onion
  • 1 cup shredded carrots
  • 3 cups beef broth
  • 1 can 10.5 oz cream of mushroom soup
  • 1 teaspoon Italian seasoning
  • 1 teaspoon minced garlic
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 8 ounces cream cheese cut into small pieces

Instructions

  • Brown the Beef: Brown the ground beef in a large skillet over high heat and drain the grease.

  • Load the Slow Cooker: Add the browned beef, diced potatoes, chopped onion, and shredded carrots to the slow cooker.

  • Add Liquids and Seasoning: Pour in the beef broth and cream of mushroom soup. Add Italian seasoning, garlic, salt, and black pepper, then stir well.
    3 cups beef broth, 1 can, 1 teaspoon Italian seasoning, 1 teaspoon minced garlic, ½ teaspoon salt, ½ teaspoon black pepper
  • Slow Cook: Cover and cook on low for 6 hours or high for 3 hours until the potatoes are tender.
  • Melt the Cheeses: Add the shredded cheddar cheese and small pieces of cream cheese. Cover and cook for about 30 minutes until fully melted and blended.

  • Serve and Top: Stir well and serve warm with your favorite toppings such as bacon, green onions, tomatoes, pickles, or more cheese.
