Crispy Quinoa Chocolate

These crunchy chocolate bites are the snack you make “just to have something healthy around,” and then mysteriously eat all by yourself. Dark chocolate, puffed quinoa, and a touch of sea salt turn into the easiest crisp treats you’ll claim took way more effort than they did.

Ingredients
  

  • 2 cups puffed quinoa
  • 7 ounces dark chocolate finely chopped
  • ½ teaspoon sea salt

Instructions

  • Toast the Quinoa: Add the puffed quinoa to a dry frying pan over medium heat. Stir for a few minutes until it dries out and gets crisp. If your quinoa is already crunchy, you can skip this step.
    2 cups puffed quinoa
  • Melt the Chocolate: Place two-thirds of the chopped chocolate in a microwave-safe bowl. Microwave in 30-second bursts, stirring each time, until fully melted. Add the remaining chocolate and stir well until melted and smooth. Remove any pieces that refuse to melt.
    7 ounces dark chocolate
  • Mix the Crunch: Pour the toasted quinoa into the melted chocolate and sprinkle in the sea salt. Stir until everything is evenly coated.
    ½ teaspoon sea salt
  • Form the Crisps: Scoop teaspoon-sized portions of the mixture onto a parchment-lined baking sheet. Press each mound down gently with the back of the spoon to make a flat disk.
  • Chill to Set: Refrigerate for about 30 minutes, or until the crisps are firm and set.
