Cucumber Tomato Onion Salad With Italian Dressing

This cucumber tomato onion salad with Italian dressing is crisp, juicy, and almost suspiciously easy for something that tastes this fresh. Thin-sliced cucumbers, sweet tomatoes, sharp onion, and zesty Italian dressing do all the work, which is exactly how a summer side dish should behave.

Ingredients

  • 2 cucumbers thinly sliced
  • 1 pint cherry tomatoes halved, or 2 medium tomatoes, diced
  • 1 medium onion diced
  • ½ cup Italian dressing homemade or store-bought

Instructions

  • Slice the Cucumbers: Wash the cucumbers well, then slice them thinly so they stay crisp while soaking up the dressing.
    2 cucumbers
  • Prep the Tomatoes: Wash the tomatoes, then halve the cherry tomatoes lengthwise. If using medium tomatoes, dice them into bite-size pieces.
    1 pint cherry tomatoes
  • Dice the Onion: Peel and dice the onion into small pieces so it adds a sharp bite without taking over the whole salad.
    1 medium onion
  • Combine the Vegetables: Add the thin-sliced cucumbers, tomatoes, and onion to a large mixing bowl.
  • Add the Italian Dressing: Pour the Italian dressing over the vegetables.
    ½ cup Italian dressing
  • Toss the Salad: Gently toss everything together until the cucumbers, tomatoes, and onion are evenly coated.
  • Serve or Chill: Serve right away for the crispest texture, or cover and refrigerate until ready to serve.
