Ingredients
  

  • ¼ cup melted butter
  • ½ cup extra virgin olive oil
  • 1 French baguette sliced into 1-inch thick slices (about 20 slices)
  • 2 large Roma tomatoes diced
  • 2 teaspoons minced garlic
  • cup finely chopped fresh basil
  • ½ cup crumbled feta cheese
  • Optional: Balsamic glaze for drizzling

Instructions

  • Prepare and Toast the Bread: In a small bowl, mix the melted butter and olive oil. Use a pastry brush to lightly coat both sides of each baguette slice. Place the slices on a baking sheet and bake at 350°F for about 10 minutes, flipping them halfway through for even browning. Remove from the oven but keep it set to 350°F.

  • Make the Bruschetta Topping: In a mixing bowl, toss together the diced tomatoes, minced garlic, chopped basil, and crumbled feta cheese until well combined.

  • Assemble and Bake Again: Spoon the tomato mixture evenly onto the toasted baguette slices. Return the baking sheet to the oven and bake for another 8 to 10 minutes, or until the feta is slightly melted and the topping is warmed through.
  • Serve and Enjoy: Serve warm or at room temperature. For extra flavor, drizzle with balsamic glaze before serving if desired.
