- ¼ cup melted butter
- ½ cup extra virgin olive oil
- 1 French baguette sliced into 1-inch thick slices (about 20 slices)
- 2 large Roma tomatoes diced
- 2 teaspoons minced garlic
- ⅓ cup finely chopped fresh basil
- ½ cup crumbled feta cheese
- Optional: Balsamic glaze for drizzling
Prepare and Toast the Bread: In a small bowl, mix the melted butter and olive oil. Use a pastry brush to lightly coat both sides of each baguette slice. ¼ cup melted butter, ½ cup extra virgin olive oil, 1 French baguette
Make the Bruschetta Topping: In a mixing bowl, toss together the diced tomatoes, minced garlic, chopped basil, and crumbled feta cheese until well combined.
2 large Roma tomatoes, 2 teaspoons minced garlic, ⅓ cup finely chopped fresh basil, ½ cup crumbled feta cheese
Assemble and Bake Again: Spoon the tomato mixture evenly onto the toasted baguette slices. Return the baking sheet to the oven and bake for another 8 to 10 minutes, or until the feta is slightly melted and the topping is warmed through.
