Grilled Sausage Salad with Berry-Peach Cobbler

A grilled sausage salad that pretends to be light and fresh, then casually serves a buttery berry-peach cobbler on the side to completely undo that illusion. Juicy peaches, smoky sausage, and sweet berries make this the kind of meal that keeps things “balanced” in the most delicious way possible.

Ingredients

  • 2 peaches sliced into wedges
  • 1 red onion sliced into thick rounds
  • 2 to 3 grilled sausages
  • 4 cups mixed salad greens
  • ½ cup crumbled cheese
  • 2 tablespoons chopped fresh herbs
  • 1 cup mixed berries
  • 1 cup sliced peaches for cobbler
  • ½ cup sugar divided
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup milk
  • ¼ cup butter melted

Instructions

  • Prep Produce: Slice the peaches into wedges and cut the red onion into thick rounds.
  • Grill Fruits and Onion: Heat a grill pan over medium-high heat. Grill the peach wedges and onion rounds for 3 to 5 minutes per side until lightly charred and softened.
  • Grill Sausage: Add the sausages to the grill pan and cook over medium heat, turning occasionally, for 8 to 10 minutes until browned and heated through.
  • Chop Grilled Ingredients: Remove the peaches and onions from the grill and let them cool slightly, then cut into bite-sized pieces.
  • Slice Sausage: Cut the grilled sausages into thick slices.
  • Assemble Salad: In a large bowl, combine the mixed greens, grilled peaches, onions, and sausage slices. Add the crumbled cheese and chopped fresh herbs.
  • Toss Salad: Gently toss everything together until evenly combined.
  • Preheat Oven: Preheat the oven to 350°F so it’s ready for the cobbler.
  • Prepare Cobbler Fruit: In a baking dish, combine the mixed berries and sliced peaches. Sprinkle about 2 tablespoons of the sugar evenly over the fruit.
  • Make Batter: In a mixing bowl, combine the remaining sugar, flour, baking powder, salt, milk, and melted butter. Stir until a smooth batter forms.
  • Assemble Cobbler: Pour the batter evenly over the fruit mixture. Do not stir after pouring.
  • Bake Cobbler: Place the dish in the oven and bake for 25 to 30 minutes, or until the top is golden and set. Remove and let it cool slightly.
  • Serve: Serve the warm grilled sausage salad alongside the berry-peach cobbler for a sweet and savory meal.
