Mini Bruschetta – One-Bite Tomato Toast
These mini bruschetta bites are the perfect appetizer for any gathering. Made with toasted baguette slices, fresh tomatoes, red onion, garlic, and basil, they are simple, delicious, and completely vegan.

- 1 French baguette sliced into ½-inch pieces (about 12-14 slices)
- 4-6 vine-ripened tomatoes finely diced
- ½ small red onion finely diced
- 2 cloves garlic minced
- ⅓ cup olive oil
- 1 teaspoon salt divided (½ tsp for tomatoes, ½ tsp for garlic oil, or to taste)
- 1 bunch fresh basil finely chopped
Preheat and Prep: Preheat the oven to 350°F. Place the diced tomatoes and onion in a sieve over a bowl, sprinkle with ½ teaspoon salt, stir, and let them sit to release excess liquid.
4-6 vine-ripened tomatoes, ½ small red onion, 1 teaspoon salt
Make the Garlic Paste: Place the minced garlic on a cutting board, sprinkle with a pinch of salt, and use the side of a knife to mash it into a paste.

Make the Garlic Oil: In a small bowl, mix the garlic paste with olive oil and ½ teaspoon of salt. Use half of this mixture to brush the bread before toasting and reserve the other half to mix with the tomatoes and onion later.

Toast the Baguette Slices: Lightly brush half of the garlic oil onto the baguette slices. Arrange them on a baking sheet and bake for about 7 minutes, or until golden and crispy.

Mix the Toppings: Discard the excess liquid from the tomatoes. In a bowl, combine the drained tomatoes and onion. Stir in the remaining garlic oil and adjust seasoning if needed.
Assemble the Crostini: Spoon the tomato mixture onto the toasted baguette slices. Sprinkle with chopped fresh basil and serve immediately.
