Skewered Salami Eyeballs

Creepy mozzarella "eyeballs" skewered with pepperoni and decorated with olives and red bell peppers. A quick snack that’s sure to be the star of your Halloween party.

Ingredients
  

  • 1 cup mozzarella balls
  • 1 red bell pepper for decoration
  • 2 tablespoons kalamata olives
  • 4 ounces pepperoni stick

Instructions

  • Cut Mozzarella: Use a sharp knife to cut small indents in the mozzarella balls and set them aside.
  • Prepare Eyes: Finely chop the kalamata olives and place them into the indents on the mozzarella balls to create the "eyes."
  • Slice Pepperoni: Cut the pepperoni stick into small pieces about 3/4 inch (2 cm) long, and also into thin slices or strips about 1/4 to 1/2 inch thick.
  • Cut Red Pepper: Slice the red bell pepper into small wedge-shaped pieces for decoration. You can also use dried chili peppers for extra spice if you like.
  • Assemble Skewers: Start building the skewer by adding the top pieces first—thread a piece of red bell pepper, followed by a chunk of pepperoni, and then the mozzarella ball with the olive "eye." After that, add a thicker slice of pepperoni. For the base of the skewer, place a few thin slices of pepperoni, followed by another mozzarella ball to keep the skewer stable.
  • Chill and Serve: Refrigerate before serving on a Halloween-themed platter.

Notes

You can prepare these ahead of time and keep them in the fridge for a few hours before serving.
