Thanksgiving Jell-O Salad
This is the fluorescent green "salad" that somehow sneaks onto every holiday table—and honestly, we’re not mad about it. Sweet, fluffy, and just retro enough to make a comeback, it blends cottage cheese, Cool Whip, pineapple, and lime Jell-O into one strangely irresistible side dish.
Prep Time 10 minutes mins
Chilling 2 hours hrs
Rubber spatula or spoon
Refrigerator
- 2 cups crushed pineapple drained (from one 16 oz can)
- 2 cups small curd cottage cheese from one 16 oz container
- 3 cups frozen whipped topping thawed (from one 12 oz container)
- 1 3 oz package lime-flavored gelatin mix
Mix the Base: In a large mixing bowl, combine the drained crushed pineapple, cottage cheese, and thawed whipped topping. Stir everything together until evenly mixed and fluffy.
2 cups crushed pineapple, 2 cups small curd cottage cheese, 3 cups frozen whipped topping
Add the Magic: Sprinkle the dry lime gelatin mix over the top—don’t dissolve it in water first. Stir until the powder is completely incorporated and the mixture turns a smooth, light green.
1 3 oz package lime-flavored gelatin mix
Chill to Set: Transfer the bowl to the refrigerator and let it chill for at least 2 hours, or until the salad is firm and set.
Serve with Sass: Scoop it into bowls, pretend it’s a salad, and enjoy the confused delight of everyone at the table.
