I made these Halloween brownies after buying too much pumpkin and pretending it was a plan. Very convincing, honestly.
They fall between cheesecake brownies and pumpkin spice brownies, which feels unfair to every plain brownie. Sorry, not sorry.
Of all the easy pumpkin desserts, this is my pick when I want drama without actual work. A rare seasonal victory.

Halloween Pumpkin Cheesecake Brownies
EQUIPMENT (PAID LINKS)
- 8-inch square baking pan
- Cooking spray
- Medium mixing bowl
- Electric hand mixer or stand mixer
- Butter knife or wooden skewer
- Wire cooling rack
Ingredients
- Cooking spray for the pan
- ¾ cup unsalted butter melted and slightly cooled
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- ½ cup all-purpose flour
- ½ cup unsweetened cocoa powder
- ¼ teaspoon salt
- 2 teaspoons ground cinnamon
- 8 ounces full-fat cream cheese softened
- 1 large egg
- ⅓ cup granulated sugar
- ¼ cup all-purpose flour
- ½ cup canned pumpkin puree not pumpkin pie filling
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- 1 teaspoon pumpkin pie spice
Instructions
- Prepare the Pan: Preheat the oven to 350°F. Lightly coat an 8-inch square baking pan with cooking spray, then line it with parchment paper, leaving some overhang on the sides for easy removal.Cooking spray
- Mix the Brownie Wet Ingredients: Add the melted butter, 1 cup sugar, and 1 teaspoon vanilla to a large mixing bowl. Beat until combined. Add 2 eggs and continue mixing until the mixture looks smooth, lighter in color, and slightly fluffy.¾ cup unsalted butter, 1 cup granulated sugar, 1 teaspoon vanilla extract, 2 large eggs
- Combine the Brownie Dry Ingredients: In a separate bowl, whisk together ½ cup flour, cocoa powder, salt, and 2 teaspoons cinnamon. Gradually add the dry ingredients to the butter mixture and mix only until no dry streaks remain. Do not overmix.½ cup all-purpose flour, ½ cup unsweetened cocoa powder, ¼ teaspoon salt, 2 teaspoons ground cinnamon
- Make the Pumpkin Cheesecake Batter: In a clean mixing bowl, beat the softened cream cheese until completely smooth. Add 1 egg, ⅓ cup sugar, ¼ cup flour, pumpkin puree, 1 teaspoon vanilla, ½ teaspoon cinnamon, and pumpkin pie spice. Beat until evenly combined and creamy, scraping down the sides of the bowl as needed.8 ounces full-fat cream cheese, 1 large egg, ⅓ cup granulated sugar, ¼ cup all-purpose flour, ½ cup canned pumpkin puree, 1 teaspoon vanilla extract, ½ teaspoon ground cinnamon, 1 teaspoon pumpkin pie spice

- Add the Brownie Base: Spread about two-thirds of the chocolate brownie batter evenly across the bottom of the prepared pan.

- Add the Cheesecake Layer: Spoon the pumpkin cheesecake batter over the brownie base. Gently spread it into an even layer without mixing it into the chocolate batter underneath.
- Create the Swirl: Drop spoonfuls of the remaining brownie batter over the pumpkin cheesecake layer. Drag a butter knife or wooden skewer through the top two batters in a loose back-and-forth pattern. Avoid scraping deeply into the bottom brownie layer if you want the layers to remain distinct.

- Bake the Brownies: Bake for 40 to 50 minutes. The brownies are ready when the center looks set and a toothpick inserted near the center comes out with moist crumbs rather than wet batter. Avoid overbaking, since the brownies will continue to firm as they cool.
- Cool Completely: Place the pan on a wire cooling rack and let the brownies cool completely in the pan.
- Chill the Brownies: Refrigerate the cooled brownies for at least 1 hour before cutting. Chilling helps set the cheesecake layer and produces cleaner slices.
- Slice and Serve: Use the parchment paper overhang to lift the brownies from the pan. Cut into 16 squares and serve chilled or allow them to sit briefly at room temperature before serving.
Halloween Pumpkin Cheesecake Brownies: Swirl First, Panic Never
These brownies are easy, but a few small choices separate clean bakery-style swirls from a pan of delicious seasonal chaos. Both are edible, but only one photographs well.

Use the Right Pumpkin
Use plain canned pumpkin puree, not pumpkin pie filling. The filling already contains sugar and spices, which can throw off the flavor and texture faster than you can say, “Why is this batter soup?”
Go With Full-Fat Cream Cheese
Full-fat block cream cheese gives the cheesecake layer the smoothest texture and helps it set properly. Whipped cream cheese from a tub contains more air and moisture, and this is dessert; it’s not the time to pretend we are making responsible choices.
Let the Cream Cheese Soften
Cold cream cheese leaves stubborn little lumps no matter how aggressively you glare at the mixer. Let it sit at room temperature for about 30 minutes so the filling blends smoothly without needing a full kitchen workout.
Cool the Melted Butter First
The butter should be melted but not piping hot when you add the eggs. Hot butter can partially cook them, and nobody ordered scrambled egg brownies for Halloween.
Adjust the Cinnamon to Your Taste
The brownie layer contains a noticeable amount of cinnamon, which makes the chocolate taste warmer and more seasonal. For a stronger contrast between the chocolate and pumpkin layers, reduce the cinnamon in the brownie batter to 1 teaspoon. I have tried both versions, and nobody left the pan unattended either way.
Swirl With Restraint
Drag a knife through only the top brownie dollops and pumpkin layer. A few loose curves are enough; too much swirling blends everything into one muddy color and removes the dramatic marbled effect.
Do Not Chase a Clean Toothpick
These brownies should be moist and fudgy, so a toothpick may come out with a few damp crumbs. Wet batter means they need more time, but a completely clean toothpick can mean you have already wandered into dry-brownie territory.
Chill Before Cutting
Let the brownies cool completely, then refrigerate them for at least an hour. Chilling firms the cheesecake layer and gives you neat squares instead of warm, delicious rubble. The waiting is rude, but it works.

Use Parchment as an Escape Plan
Leave a little parchment paper hanging over two sides of the pan. Once the brownies are cold, use it to lift the whole slab out before slicing, saving you from digging out the first square with a spoon and calling it “quality control.”
Make the Slices Cleaner
Use a large sharp knife and wipe the blade clean between cuts. For especially tidy edges, run the knife under hot water, dry it, and slice while it is still warm.
Take the Easy Decorating Route
For a stronger Halloween look, add a few drops of orange gel food coloring to the pumpkin cheesecake batter. Gel coloring works better than liquid because it adds color without thinning the filling.
Store Them Cold
Keep the brownies in an airtight container in the refrigerator for up to 5 days. They taste especially good chilled, and the cheesecake layer stays firm instead of becoming overly soft on the counter.
Freeze the Extras
Freeze fully cooled squares in a single layer until firm, then wrap them individually and place them in a freezer-safe container. They will keep for up to 3 months and thaw overnight in the refrigerator—assuming you somehow managed to have leftovers.
