Tips, Tricks, and Mild Chaos: Everything I Know About Crockpot Ham and Potato Corn Chowder

When Your Veggies Are Judging You
If chopping feels like a personal attack, grab pre-diced mirepoix or those bags of “ready-to-cook” potatoes. There is no award for peeling carrots by hand on a Tuesday night. The crockpot won’t care, and neither will anyone eating this.
Milk, Cream, or Whatever’s in the Fridge
If you’re out of milk, half-and-half or even evaporated milk works. I’ve even used non-dairy creamers when the fridge was on strike. The trick is adding it at the end so you don’t curdle your dignity.
Ham: Fresh, Leftover, or Questionable
Leftover holiday ham? Perfect. Cheap diced ham from the store? Also perfect. Ham steak you forgot about until the fridge yelled at you? Still perfect. The beauty of chowder is that it forgives your grocery-shopping choices.

Corn Is Corn—Use What You Have
Canned corn, frozen corn, fresh corn—whatever form it takes, just toss it in. I’ve even used a mix when I was cleaning out the freezer. The only wrong corn is no corn.
Thick or Thicker: Choose Your Destiny
Instant potato flakes are the magic here, but if you run out, a scoop of leftover mashed potatoes works too. If you want soup instead of chowder, use fewer flakes and pretend you meant to do that. Control the thickness like the culinary puppet master you are.
When the Crockpot Runs Hotter Than Your Patience
Some slow cookers simmer like a spa day; others boil like a volcano. If yours runs hot, check early so the potatoes don’t disintegrate into emotional support mush. Know your crockpot—it has a personality, and sometimes it’s chaos.
Storage: The Next-Day Glow-Up
This chowder thickens in the fridge, which means leftovers are basically an upgrade. Add a splash of broth or milk when reheating if you want it looser. Just don’t freeze it unless you enjoy watery potatoes and regret.
Toppings: Only If You’re Trying to Impress Someone
Cheddar, bacon, green onions—throw them on if you want the chowder to look fancy. If not, skip it. This recipe shines even when you’re phoning it in.
