This chicken tastes like autumn got organized. Sweet balsamic, honey, apples, and squash make dinner feel cozy without requiring a scarf.
I made this on a chilly night when ambition was low. Somehow, the skillet did the work and I took all the credit.
It’s colorful, hearty, and just dramatic enough. Basically, a fall dinner that knows how to behave.

Honey Balsamic Autumn Chicken
EQUIPMENT (PAID LINKS)
- Measuring cup
Ingredients
- 2 boneless skinless chicken breasts
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- 1 tablespoon canola oil
- ½ cup balsamic vinegar
- ¼ cup honey
- 1 teaspoon Italian seasoning
- 2 cups Brussels sprouts trimmed and halved
- 2 cups butternut squash peeled and cubed
- 1 apple cored and diced
- ½ teaspoon kosher salt
Instructions
- Season Chicken: Sprinkle the chicken breasts on both sides with ½ teaspoon kosher salt and black pepper.
- Heat Oil: Add canola oil to a large skillet. Heat it over medium-high heat until the oil is hot and shiny.
- Sear Chicken: Place the chicken breasts in the skillet. Cook for 5 to 6 minutes per side, until browned. Remove the chicken from the skillet and set it aside.

- Make Balsamic Sauce: Add balsamic vinegar, honey, and Italian seasoning to a small saucepan. Simmer over medium heat for 8 to 10 minutes, stirring occasionally, until the sauce slightly thickens.
- Prep Autumn Mix: Place the halved Brussels sprouts, cubed butternut squash, and diced apple in a mixing bowl.

- Cook Vegetables and Apple: Add the Brussels sprouts, butternut squash, and apple to the skillet. Sprinkle with the remaining ½ teaspoon kosher salt. Cook over medium heat for 10 to 12 minutes, stirring occasionally, until the squash is tender and the Brussels sprouts are browned in spots.
- Finish Chicken: Return the chicken to the skillet with the vegetables. Cook for 4 to 6 minutes more, until the chicken is cooked through and reaches 165°F in the center.
- Slice Chicken: Remove the chicken from the skillet and slice it into thick pieces.
- Plate and Sauce: Spoon the Brussels sprouts, butternut squash, and apple onto plates. Top with sliced chicken and drizzle with the honey balsamic sauce.
Honey Balsamic Autumn Chicken: Cozy Dinner, Minimal Drama
This is the part where we pretend we planned ahead. We did not, but dinner will still look suspiciously responsible.

Use Even Chicken Pieces
Chicken breasts love cooking unevenly because apparently they enjoy causing stress. Pound them a little thinner or slice big ones in half lengthwise so they cook faster and don’t turn into dry little doorstops.
Don’t Crowd the Skillet
Give the chicken and vegetables some breathing room. If everything is piled on top of itself, it steams instead of browns, and that’s how dinner gets sad.
Shortcut the Squash
Buying pre-cut butternut squash is not cheating. It is self-care with a barcode. Fresh is great, frozen can work too, but thaw it and pat it dry so it doesn’t water down the skillet.
Swap the Apples
A firm apple works best here, like Honeycrisp, Fuji, or Granny Smith. Soft apples can turn mushy fast, which is fine if you enjoy accidental applesauce with your chicken.

Change the Veggies
Brussels sprouts are great, but broccoli, green beans, carrots, or sweet potatoes can jump in if that’s what you have. This recipe is very “clean out the produce drawer and call it seasonal.”
Make the Sauce Behave
Keep an eye on the honey balsamic sauce because it can go from glossy and gorgeous to sticky chaos quickly. If it gets too thick, splash in a little water and act like that was always the plan.
Use Thighs Instead
Boneless, skinless chicken thighs are a great swap if you want more flavor and less fear of overcooking. They are forgiving, juicy, and basically the golden retriever of chicken cuts.
Store It Smart
Leftovers keep well in the fridge for about 3 to 4 days. Store the sauce separately if possible, because future you deserves food that reheats nicely instead of one big mystery clump.
Reheat Without Ruining It
Warm leftovers in a skillet over medium-low heat with a splash of water or extra sauce. The microwave works too, obviously, but cover it unless you enjoy cleaning balsamic dots off the ceiling.
Add a Simple Side
Rice, mashed potatoes, couscous, or crusty bread all work well here. Something plain is best because the chicken already showed up wearing the flavor equivalent of a fall festival.
