Spiced salmon meets juicy mango salsa, and suddenly Tuesday dinner is acting like it has reservations.
This started as a “use the mango before it dies” dinner. Turns out, panic can taste pretty great.
Smoky salmon, lime, and cheesy cauliflower rice make it work. Fancy-looking, low-drama—that’s the real win.
Spiced Salmon with Mango Salsa and Cauliflower Rice
EQUIPMENT (PAID LINKS)
- Medium mixing bowl
- Small shallow bowl
- Grill pan or large skillet
- Food processor
Ingredients
- 1 large ripe mango peeled and diced
- ¼ cup finely chopped red onion
- ¼ cup chopped fresh cilantro
- 1 tablespoon agave nectar
- ¼ teaspoon kosher salt
- 2 tablespoons fresh lime juice
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- ½ teaspoon kosher salt
- 4 sockeye salmon fillets about 6 ounces each
- 1 medium head cauliflower cut into florets
- 1 cup drained hominy
- ½ cup grated Parmesan cheese
- 1 tablespoon dried chives
Instructions
- Dice Mango: Peel the mango and cut the flesh away from the pit. Dice the mango into small pieces and place them in a medium mixing bowl.
- Add Red Onion: Finely chop the red onion and add it to the bowl with the mango.
- Add Cilantro: Chop the fresh cilantro and add it to the mango and red onion.
- Sweeten and Season Salsa: Pour the agave nectar over the mango mixture. Sprinkle ¼ teaspoon kosher salt over the salsa ingredients.
- Add Lime Juice: Pour the fresh lime juice over the mango mixture.
- Mix Salsa: Stir until the mango, red onion, and cilantro are evenly coated. Set the salsa aside while preparing the salmon.
- Make Spice Blend: Combine the smoked paprika, chili powder, cumin, and ½ teaspoon kosher salt in a shallow bowl. Stir until evenly blended.
- Season Salmon: Place the salmon fillets on a work surface. Divide the spice mixture evenly among the four fillets and coat the tops thoroughly.
- Sear Salmon: Heat a grill pan or large skillet over medium-high heat. Place the seasoned salmon in the hot pan and cook for about 3 to 4 minutes on the first side, until browned.
- Flip Salmon: Turn the salmon carefully with tongs. Cook for another 2 to 4 minutes, until the salmon is browned and cooked through. Remove it from the heat and set aside.
- Prepare Cauliflower: Cut the cauliflower into florets small enough to fit comfortably in the food processor.
- Rice Cauliflower: Add the cauliflower florets to the food processor and pulse in short bursts until they resemble small grains of rice. Avoid processing them into a puree.
- Add Hominy: Add the drained hominy to the food processor with the cauliflower.
- Pulse Together: Pulse briefly until the hominy is chopped and distributed throughout the cauliflower while the mixture still has a rice-like texture.
- Cook Cauliflower Rice: Transfer the cauliflower and hominy mixture to a large skillet over medium heat. Cook for about 5 to 7 minutes, stirring frequently, until the cauliflower is tender and the mixture is heated through.
- Add Parmesan: Sprinkle the grated Parmesan over the cauliflower mixture. Stir until the cheese is evenly distributed and begins to melt.
- Add Chives: Stir in the dried chives and cook for about 1 minute more. Remove the skillet from the heat.
- Assemble: Divide the cauliflower “rice” among four serving plates and add one cooked salmon fillet to each plate.
- Top With Salsa: Spoon the mango salsa generously over each salmon fillet and serve immediately.

Spiced Salmon with Mango Salsa and Cauliflower “Rice”: Tricks for Maximum Dinner Bragging Rights
I’ve made versions of this enough times to know where shortcuts actually help. Nobody gets a medal for making cauliflower rice the hard way.
Use Frozen Cauliflower Rice and Move On
Fresh cauliflower works great, but a bag of frozen cauliflower rice is my favorite “I have other things to do” shortcut. Cook off the extra moisture before adding the cheese so you get fluffy cauliflower instead of something suspiciously close to porridge. Convenience food is still cooking, and I will die on this very comfortable hill.
Pick a Mango That Actually Wants to Be Eaten
A rock-hard mango will give you crunchy salsa and emotional damage. Look for one that gives slightly when pressed but isn’t mushy. If mangoes at the store look tragic, diced pineapple or ripe peaches make an excellent stand-in. Good fruit matters more than blindly following the ingredient list.
Honey Can Cover for the Agave
No agave nectar hiding in the pantry? Honey works beautifully, and maple syrup will do the job too. Start with a little less if your fruit is already very sweet—you want the salsa fresh and tangy, not headed toward dessert territory.
Cilantro Haters Have Options
If cilantro tastes like soap to you, this is not the recipe where you need to suffer for authenticity. Flat-leaf parsley gives the salsa plenty of freshness without that unmistakable cilantro flavor. Dinner should not feel like a punishment for your genetics.
Don’t Pulverize the Cauliflower
The food processor goes from “perfect little rice pieces” to “vegetable paste” remarkably fast. Use short pulses and stop while the pieces still have some texture. I’ve learned this lesson the mushy way more than once, because apparently optimism is not a food-processing technique.
Give the Hominy a Shortcut Too
Drain the hominy really well before adding it to the cauliflower. Extra liquid makes the skillet steamy instead of lightly sautéed. If hominy isn’t your thing, corn is an easy substitute and gives you the same sweet little pops without requiring a pantry scavenger hunt.
Swap the Cheese Without Starting a Crisis
Parmesan brings salty, savory flavor, but Pecorino Romano works nicely if that’s what you have. It’s saltier, so use a lighter hand at first. The correct amount of cheese is usually “enough to make the vegetables stop complaining.”
Watch Sockeye Salmon Like a Hawk
Sockeye is leaner than fattier salmon varieties, so it can go from juicy to dry faster than you’d expect. Pull it from the heat as soon as it’s cooked to your liking rather than giving it “just another minute” for emotional reassurance. That extra minute is usually where regret lives.
Use Another Salmon If It’s Cheaper
Atlantic salmon works perfectly well here and is often easier to find. It’s usually fattier than sockeye, which makes it a little more forgiving if you’re cooking while answering texts, unloading the dishwasher, or generally pretending to multitask successfully.
Make the Salsa Ahead, but Not Too Far Ahead
The mango salsa is great made a few hours before dinner because the lime and seasonings get a chance to mingle. I wouldn’t make it days ahead, though—the fruit gets softer and the cilantro loses its sparkle. Fresh salsa should look lively, not like it has already had a long week.
Keep the Components Separate for Leftovers
Store the salmon, cauliflower rice, and mango salsa in separate airtight containers. The salmon and cauliflower mixture should keep well in the refrigerator for about 3 days, while the salsa is best sooner. Keeping everything separate prevents the warm ingredients from turning your beautiful salsa into sweet, soggy confusion.
Reheat the Salmon Gently
High heat is great the first time around and fairly rude the second. Reheat leftover salmon gently in a covered skillet over low heat or use short microwave bursts until just warmed through. Add the cold mango salsa afterward. Your goal is lunch, not salmon jerky.
