  1. Since both bronze (which contains lead) and Teflon are toxic, why are either used for pasta extrusions?

      Bronze: The bronze dies used in pasta-making typically don’t leach harmful amounts of lead. Modern regulations ensure that any lead content is minimal and within safe limits. Bronze imparts a rough texture to pasta, which helps sauces cling better—key for traditional pasta.

      Teflon: Teflon dies create smooth pasta and are non-toxic when used at normal pasta-making temperatures. The concern with Teflon arises mainly at very high temperatures, where it can degrade—not an issue in this context.

      In short, they’re chosen for the texture they provide, not for toxicity reasons, and when used responsibly, they’re safe for pasta production!
